Home Economist Barb Holland ORANGE DATE MUFFINS

Look for soft pitted dates in the produce section rather than the firm pressed dates in the baking aisle. This recipe uses the whole orange; peel and all - just remember to remove the seeds.

1-1/2 cups whole wheat flour    (375 mL)
2 tbsp brown sugar   (25 mL)                                  
1-1/2 tsp baking powder    (7 mL)                          
1/2 tsp baking soda    (2 mL)                                  
1/4 tsp salt    (1 mL)                                                 
1 orange, with peel, cut into pieces (remove seeds)
1 cup pitted dates   (250 mL)
¾ cup buttermilk   (175 mL)
¼ cup canola oil  (50 mL)
1 egg

Preheat oven to 400F (200C). Line a muffin pan with
Chefs Select Natural Non-Stick Baking Cups  

In medium bowl, combine flour, brown sugar, baking powder, soda and salt.

Toss orange, dates, buttermilk, oil and egg in blender and process until oranges and dates are well chopped (you want some texture).  Stir into dry mixture just until blended.

Scoop or spoon batter into muffins cups.  Bake 18 to 20 minutes or until toothpick inserted in centre comes out clean. Cool pan on wire rack 5 minutes. Remove from pan to cool completely.     

Makes 12 muffins.
