Peanut Butter and Raisin Cookies

PEANUT BUTTER & RAISIN COOKIES

Who can resist peanut butter cookies?

3/4 cup all purpose flour (175 mL)
1/2 cup quick cooking oats (125 mL)
1/2 tsp baking soda (2 mL)
1/4 tsp salt (1 mL)
1/2 cup softened butter (125 mL)
1/2 cup peanut butter (125 mL)
1/3 cup lightly packed brown sugar (75 mL)
1/3 cup granulated sugar (75 mL)
1 egg
1 tsp vanilla (5 mL)
1/2 cup unsalted peanuts (125 mL)
1/2 cup raisins (125 mL)

In bowl, combine flour, oats, soda and salt.

In large bowl, cream butter and peanut butter with sugars. Beat in egg and vanilla until smooth. Add dry ingredients to creamed mixture, blending well. Stir in peanuts and raisins.

Drop by spoonfuls onto Chefs Select Parchment Paper lined baking sheets. Flatten lightly with floured fork. Bake in preheated 350°F (180°C) oven for 12 to 15 minutes or until lightly golden. Cool on wire racks.

Makes about 3 dozen.
